I love truffles only that in my parts it’s hard to find and it costs a fortune, but every now and then the delicacies must be satisfied so I had my brother-in-law buy a small little white truffle at a festival in the province of Alba where the white truffle is the specialty of the area 🙂

And so here is the recipe to prepare Tagliatelle al tartufo, a first course as simple as refined that you can prepare for a dinner for 2, maybe just on the occasion of Valentine’s Day dinner. Truffle has a very special flavor and a very strong smell so you either love it or hate it and clearly you will have to ascertain the tastes of your diners before you decide to prepare truffle tagliatelle, I personally loved them.

Clean the white truffle with a toothbrush or by rubbing it with a barely damp cloth to remove any earthy residue.

Brown a clove of garlic in a large skillet with butter and add the grated truffle.

Cook the tagliatelle in plenty of salted water, drain them al dente (saving a ladleful of cooking water) and pour them into the pan with the butter and truffle.
Add the grated Parmesan cheese and sauté the pasta in the pan, letting it season for a few minutes, stirring occasionally with a wooden spoon and adding a little cooking water.

Serve the Tagliatelle al tartufo, sprinkling each plate with freshly grated white truffle.
