I love truffles only that in my parts it’s hard to find and it costs a fortune, but every now and then the delicacies must be satisfied so I had my brother-in-law buy a small little white truffle at a festival in the province of Alba where the white truffle is the specialty of the area 🙂
And so here is the recipe to prepare Tagliatelle al tartufo, a first course as simple as refined that you can prepare for a dinner for 2, maybe just on the occasion of Valentine’s Day dinner. Truffle has a very special flavor and a very strong smell so you either love it or hate it and clearly you will have to ascertain the tastes of your diners before you decide to prepare truffle tagliatelle, I personally loved them.

Cook the tagliatelle in plenty of salted water, drain them al dente (saving a ladleful of cooking water) and pour them into the pan with the butter and truffle. |
