A typical Sicilian recipe whose sauce made with chili pepper, garlic, extra virgin olive oil, pecorino cheese and parsley requires less preparation time than cooking pasta. And it would be more correct to say “of emulsion” since it is totally uncooked.

Preparing pasta alla carrettiera is quick and easy. While you are boiling the spaghetti, chop the garlic and chili finely and collect them in a bowl with plenty of oil and salt. Emulsify everything with a fork. Drain the pasta al dente, transfer it to the soup bowl and toss with the prepared emulsion, adjusting the consistency with a little of the pasta cooking water. |
