We were inspired by the sauce of meat pizzaiola flavored with oregano and added slices of mozzarella, which with its stringy touch at the end of cooking will make the chicken breasts a real delicacy. Capers will also give an extra kick to this inviting preparation.

To prepare Pollo alla pizzaiola first clean your chicken breasts, remove the middle part of the bones, the excess fat [1], and cut it [2] to get 4 slices [3].

Slice the mozzarella cheese as well [4], let it drain in a colander so that it loses some excess whey. Crush a clove of garlic and brown it in a nonstick skillet with a drizzle of oil [5]. Brown the chicken breasts for about 3 minutes per side, over high heat so that they take on some color [6]. Remove the garlic clove and season with salt and pepper.

After browning, remove the breasts [7] and keep them aside [8]. In the same pan, pour in the capers [9]

and the tomato sauce [10], which you will cook for about 5 minutes. At this point, put your chicken breasts back in the pan [11] and bring the chicken to cook, cooking for about 10 minutes with the lid on [12].

When finished cooking, add basil leaves broken with your hands [13], place mozzarella cheese on the breasts [14] and add oregano [15],

Tips

- It is recommended that you consume the Pollo alla pizzaiola at the time; if it leftovers, you can store it in the refrigerator for up to a couple of days. You can freeze the preparation if you have used fresh ingredients that have not been thawed.
- We recommend draining the mozzraella well otherwise it will release water in cooking. If the chicken slices turn out to be too thick, you can make them thinner with a meat tenderizer.
- If you don't like capers you can replace them with olives or remove them completely.
