Pan-fried porri are an easy, healthy and tasty side dish that can be prepared in just 5 minutes.

To make this tasty recipe you only need leeks, olives, capers and oil, just a few ingredients for a flavorful dish that is perfect to accompany both meat and fish.

Wash and peel the leeks, removing the outer leaves, the tougher green ends, and the roots. Cut them in half lengthwise and again in half each piece.

In a frying pan lightly sauté the oil with garlic and chili pepper. Add the pitted olives, capers and sauté for 1 minute. Remove garlic and add leeks, stir well and wilt for about 5 minutes, add 1 tablespoon water if needed, add salt to taste and serve immediately in your sautéed porri.
