To prepare the Neapolitan pizza dough recipe place the flour on the work surface or in the planetary mixer, then slowly add the water. As you add the water start kneading the dough and then add the brewer's yeast as well. Finally add the salt and knead until the dough is elastic and firm. |

Take a large bowl, oil it and place the pizza dough in it. Cover with a dish towel and place in the oven off, but with the light on, to rest. Let rise for three hours minimum, or at least until the dough has doubled in volume. |

Now take the dough again, knead it very quickly and finally make many small balls of about 200 grams each. Now take a baking sheet, flour it well and place the dough balls on it. Cover again with a tea towel and let rise for another 6 hours at least. At this point your Pizza Napoletana dough is ready to be stuffed and baked! |

Tips- To get a really perfect Pizza Napoletana dough, the temperature of the water should be around 22°C (71,6°F).
