Today I offer you a recipe for fregola sarda with seafood, it’s so good! Can you believe I had never tasted it? And I found out that in my family we love it! A few days ago, I found it in a health food store and got the urge to try it.
Fregola (or fregula) is a form of durum wheat semolina pasta, shaped like a ball. It is made by rubbing semolina in a large earthenware container in circular motions into various sizes, small, medium or large.
These balls are then toasted in the oven, which gives them their characteristic amber color and slightly toasted taste. It is usually prepared with clams or seafood but is also excellent with vegetables or legumes. I propose this recipe for Christmas Eve, you will see that it will be a hit! I used the ready-made seafood mix, those who know me know that I do not get along very well with fish but you, if you want, can use fresh seafood.

StepsFirst prepare the vegetable broth. You can dissolve a vegetable stock cube in 400 ml of water or boil, again in 400 ml of water and salt, an onion, a piece of celery stalk and a carrot for 15 minutes. |

Wash the tomatoes and parsley well, dry them. Cut the tomatoes into 4 parts and chop the parsley. |

Pour about 4 tablespoons of extra virgin olive oil into a large frying pan and sauté the garlic clove cut in half for 1/2 minute. |

Add the tomatoes, salt lightly, and cook on high heat for 2 to 3 minutes. |

Remove the garlic and add the still-frozen seafood mixture and cook, still on high heat, for 10 minutes. Deglaze with 2 tablespoons of white wine. |

Add the fregola and continue cooking, adding a ladleful of vegetable stock a little at a time and stirring occasionally, just as you would with risotto. It will take about 15 minutes to cook. |

Tips- If you want to use fresh seafood, use 150 grams of shrimps, 150 grams of mussels, 150 grams of clams and 2 squids cut into rounds. - If you want, you can boil the fregola for 2 to 3 minutes before continuing cooking in the pan. |
