Authentic pesto recipe is one of the most widely used and well-known sauces in the Italian culinary tradition. There are many regional variants of pesto, but the most famous and beloved one all over the world is Genoese pesto. The custodian of the original recipe, the official recipe for pesto, is the Consorzio del Pesto Genovese, which is based in the Regione Liguria building in Genoa. Here is how to prepare the one, true, authentic Genoese pesto recipe.

Steps

1
Done

Clean the basil leaves gently with a dampened dishcloth (do not wash them under running water).

2
Done

Cut the garlic into small pieces.

3
Done

In a mortar place garlic with a pinch of salt and work it with the pestle until it has a creamy consistency. Add the pine nuts and add the basil leaves a little at a time, working them with the pestle in a rotary motion. Finally add the cheese and oil.

4
Done

If you do not have a mortar, you can prepare it with a blender by putting all the ingredients in the glass kept for a while in the freezer before starting the preparation to avoid blackening the pesto.

5
Done

The pesto can be stored two or three days in the refrigerator, taking care to cover the surface with oil; alternatively, it can be frozen.
