Clean the basil leaves gently with a dampened dishcloth (do not wash them under running water).

Cut the garlic into small pieces.

In a mortar place garlic with a pinch of salt and work it with the pestle until it has a creamy consistency. Add the pine nuts and add the basil leaves a little at a time, working them with the pestle in a rotary motion. Finally add the cheese and oil.

If you do not have a mortar, you can prepare it with a blender by putting all the ingredients in the glass kept for a while in the freezer before starting the preparation to avoid blackening the pesto.
