How to cut sponge cake

Sponge cake is the base for many desserts, and learning how to cut it precisely is essential in order to have multiple discs to fill. Usually the greatest difficulty in this operation is to get the disks equal and especially level.
Depending on the height of our sponge cake, we can decide whether to divide it into two or three. Learning how to cut the sponge cake is really simple but requires some practice and above all precision.
First let the sponge cake cool completely, my advice is to prepare the sponge cake the day before and then cut and stuff it in the next day.
Use two types of knives, one pointed and sharp and the other long with a smooth blade.
Basically, there are two steps to cut the sponge cake:
Take a serrated knife and “draw” a line along the entire contour that will be our guide when cutting. Following this will make it easier to have two equal and level disks.
Take the long knife and start cutting from the guideline you have created, and resting one hand on the top so that you can feel the knife’s progress. Remove the first layer and thus proceed to divide the next one in two.
